Prawn Salad with Herb Dressing and Al Rabie Orange Juice

Instructions

1. Preheat oven to 200°C/180°C fan-forced. Place oil, seasoning and potato on a baking tray. Toss to coat. Roast for 35 minutes or until golden and tender. Cool. Fry prawns over medium heat until ready cool.

2. Make dressing: Combine 1/4 cup Al Rabie Orange Juice, olive oil, sesame oil, thyme, and chopped mint in a bowl.

3. Place potato, prawns, celery, onion, lettuce and mint leaves in a large bowl. Toss to coat. Serve with dressing.
